Grilled Corn with Hatch Chile Goat Cheese
Ingredients
| 8 | ears of sweet corn, husks removed |
| 1/2 cup | sour cream |
| 1/3 cup | mayonnaise |
| 1/2 cup | cilantro, roughly chopped, plus more to garnish |
| 1 tsp | chili pepper |
| 1/2 tsp | sea salt |
| 1/2 tsp | garlic powder |
| 1 | lime, zested and juiced |
| 1 disk | Cypress Grove Hatch Chile goat cheese, crumbled |
| Lime wedges, to garnish |
Instructions

- Heat gas or charcoal grill.
- Whisk together sour cream, mayonnaise, cilantro, chili pepper, garlic powder, sea salt, lime zest, and lime juice. Set aside.
- Grill the corn: place the husked corn directly onto hot grill grates. Grill for 3 minutes per side, or until kernels begin to turn golden brown. Remove corn from grill and set on a plate.
- Immediately brush the corn with a generous amount of crema mixture, sprinkle with crumbled goat cheese, and garnish with additional cilantro. Serve with lime wedges and enjoy!
