Purple Haze and the Witch's Flight

Bubble, bubble, toil, and trouble! We’re getting in the Halloween spirit with the Witch's Flight cocktail, a spooky spin on the classic Aviation. It's a bright, refreshing drink with a ghoulish glow and notes of flowers and licorice.

Gin's herbaceous quality is a natural match for goat cheese, especially paired with our Purple Haze: fresh goat cheese lightly infused with lavender and wild-picked fennel pollen. The Witch's Flight plays off the floral, licorice notes in the cheese for an enchanting combination.

Be sure to choose a great gin such as Plymouth for this drink. In order to make a good cocktail, you have to have quality ingredients. We approach our fine cheese alchemy the same way: transforming fresh, clean milk into luscious cheeses. Our own dairy is 100 percent humane certified by the American Humane Association—we were the first goat dairy in the country to receive a perfect certification score, and we earned it two years in a row.

So conjure your favorite gin, shake up a cocktail, and pair it up with our Purple Haze. We also recommend enjoying this pairing with chocolate wafer cookies for a sweet, crunchy combo. It’s like Halloween candy, for adults!

2 oz gin (we like Plymouth)
¾ oz maraschino liqueur
½ oz Créme di Violette
¼ oz lemon juice
Absinthe, for rinsing

Coupe glass, chilled
Cocktail shaker

1. Rinse a coupe glass with absinthe.
2. Fill a cocktail shaker with ice. Add the rest of the ingredients.
3. Shake for a slow count of about 10 seconds. If you have guests, shake it over your shoulder. It makes you look like a pro.
4. Pour into the prepared coupe glass. Garnish with a lemon twist and a maraschino cherry, if desired.
