8 ears of sweet corn, husks removed
½ cup sour cream
1/3 cup mayonnaise
½ cup cilantro, roughly chopped, plus more to garnish
1 tsp. chili pepper
½ tsp. sea salt
½ tsp. garlic powder
1 lime, zested and juiced
1 disk Cypress Grove Hatch Chile goat cheese, crumbled

- Heat gas or charcoal grill.
- Whisk together sour cream, mayonnaise, cilantro, chili pepper, garlic powder, sea salt, lime zest, and lime juice. Set aside.
- Grill the corn: place the husked corn directly onto hot grill grates. Grill for 3 minutes per side, or until kernels begin to turn golden brown. Remove corn from grill and set on a plate.
- Immediately brush the corn with a generous amount of crema mixture, sprinkle with crumbled goat cheese, and garnish with additional cilantro. Serve with lime wedges and enjoy!
